Tasting note:
An intense dark red colour with garnet tints. The bouquet presents an agreeable spiced expresión of nail and slightly caramelized pepper that confirms its unequivocal mediterranean origin.
It presents an elegant evolution of olives fragrance and very nature red fruits. On the palate is shown powerful with a good tannic structure, dense, ample. It shows as a fleshy, elegant wine with notes of spices and a final touch of coffee.It has an agreeable balance reinforced by a good acidity and a good persistance that advises a periodo of rest in the bottle to develop fully his virtues.

Harvest:
The wine is produced from a combination of the syrah and Petit verdot varieties, of our own vineyard at the casa Sicilia and las Alcaldías states. The Monastrell comes from a plot of more than 50 years maintaining some vinestocks of pre-filoxerics times. The vinestocks are cultivated exclusively in dry land and its natural yield does not exceed the kilo grape by vinestocks. The grapes are handpicked into small 15 kg boxes to avoid crushing. Once in the wine cellar the best grapes are then selected
Elaboration :
Alter a cold maceration process wich takes 6 days with the help of carbonic snow, the must ferments with its native yeasts in stainless steel deposits at a controlled temperature of 28/30ºC.After the malolactic fermentation, the wine is aged for 16 months in new barrels of French oak ( 80% ) and countries of the east (20%).
The bottling has been carried out in February of 2006, without any clarification neither filtration in order to respecting at maximum the product.
Aging potential: 10-15 years
Best consumed at: a temperature of between 15 and 17ºC

Due to the light filtration in the elaboration process natural sediments can appear in the bottle. Our wine maker recommends decanting this wine in order to yield its best expression.
